Piezoelectricity - why hitting crystals makes electricity

Magic explained with lids from peanut butter jars. It's a nice explanation, but there is so much you have to take on faith, like atoms exists, atoms have electrons, atoms make molecules, and some molecules have regular structures. Is a quartz crystal a single molecule? If you hit it with a hammer and it breaks, are you breaking molecular bonds? Enquiring Minds [tm] want to know. Also, how do the piezo guys know what angle to use when they cut the crystals? And what do they cut the crystals with?
